Pesto Chicken

A main dish that only calls for 4 ingredients and takes 5 minutes to prepare? I’m allll in. I really have started to enjoy cooking and like to try challenging recipes. But some nights the budget and time frame don’t cooperate, therefore I’m scrambling to put a delicious dinner on the table by six (which is already late enough if you ask Caleb, ha!). This pesto chicken was so yummy and very inexpensive! Most importantly, it was suppperrrr easy.

Go ahead and preheat your over to 350 degrees. Place your chicken breasts into a small baking dish.
Then you'll add the pesto on top. I chose to use the Buitoni pesto with basil. We had it leftover from another dish we recently cooked, so one container of it can go a long way. I only cooked two pieces of chicken, but one container of the pesto can easily cover at least 8 pieces.
Next I put on shredded parmesan cheese which was also an ingredient we already had in the fridge. You could also use mozzarella. Shredded cheese or sliced cheese will work.

For the tomatoes I used roma tomatoes, because they are the perfect size to fit on top. For reference if you're making more than two pieces, for two pieces of chicken I used almost one tomato.  

Once you have it all prepared pop it in the oven for 30-40 minutes. I did 40 because the chicken breasts we had were very thick and I'm paranoid about eating undercooked chicken. Serve and enjoy!
